Job Description

Alba Los Angeles is seeking an experienced Executive Sous Chef to join our leadership team. Alba is a high-end Italian restaurant focused on exceptional ingredients, refined execution, and a hospitality-driven kitchen culture. Our goal is to be one of Los Angeles’ most respected dining destinations.

This role is designed for a strong leader who can operate as the right hand to the Chef de Cuisine , owning daily execution while helping drive standards, systems, and team performance.

Position Overview

The Executive Sous Chef will oversee all day-to-day kitchen operations, ensuring consistency, organization, and excellence across every service. This individual must be highly organized, detail-oriented, and capable of leading a team in a fast-paced, high-expectation environment.

Key Responsibilities

Culinary Leadership

  • Uphold and enforce Alba’s standards of quality, consistency, and presentation
  • Execute all recipes and systems with precision
  • Lead and expedite service while maintaining composure and control
  • Collaborate with the Chef de Cuisine on menu development and refinement

Operations & Systems

  • Drive organization and efficiency across all kitchen operations
  • Oversee inventory, ordering, and product management (FIFO, quality control)
  • Maintain strong cost awareness across labor, food cost, and waste
  • Ensure all prep and service systems are clean, clear, and consistently executed

Team Leadership

  • Train, coach, and develop all BOH team members
  • Set clear expectations and hold the team accountable to performance standards
  • Foster a culture of professionalism, urgency, and respect
  • Provide ongoing feedback and support team growth

Service Execution

  • Lead the line during service with clarity and authority
  • Ensure proper pacing, communication, and coordination with FOH
  • Maintain standards while driving efficiency during high-volume service

Health & Safety

  • Ensure full compliance with all health department regulations (A-grade standard)
  • Maintain a clean, organized, and safe kitchen at all times
  • ServSafe certification required
Candidate Profile
  • 5+ years of progressive kitchen leadership experience (fine dining preferred)
  • Strong leadership presence with the ability to motivate and manage teams
  • Deep respect for ingredients, technique, and Italian cuisine
  • Highly organized with strong operational discipline
  • Calm, decisive, and solutions-oriented under pressure
Compensation & Benefits
  • Salary: $85,000 – $100,000 (based on experience and scope)
